覆地膜对早熟白肉硬溶质油桃和桃果实挥发性成分的影响

中文摘要:为探讨覆地膜对早熟白肉硬溶质桃风味品质的影响机制,以鲁星油桃和春雪桃果实为试材,进行果园覆盖地膜处理,采用静态顶空和气相色谱-质谱联用技术测定其果实挥发性成分。结果表明,覆膜鲁星果实检测到38种挥发性成分,含24种特征香气成分,对照鲁星果实检测到39种挥发性成分,含23种特征香气成分,覆膜和对照春雪的果实均检测到42种挥发性成分,各含有22和23种特征香气成分;覆膜使2个品种果实1-己醇、己醛、安息香醛、乙酸丁酯、乙酸-2-甲基-1-丁酯、乙酸己酯、γ-癸内酯、δ-癸内酯、γ-十二内酯,以及春雪果实中里那醇等特征香气成分的对数香气值显著降低,降低了2个品种果实的香味嗅感;2个品种果实挥发性成分均为醇、醛、酯、内酯、萜和酮类,鲁星、春雪分别以内酯和酯类含量较高;2个品种覆膜处理的果实醛类含量均显著高于对照,醇、酯和内酯类含量均显著低于对照,C6成分和酮类与对照差异不显著,覆膜春雪的果实萜类含量显著低于对照,而对鲁星影响不显著。覆膜使决定春雪桃和鲁星油桃果实香味的主要挥发性成分含量降低。

Effect of Film Mulching on Volatile Compounds in Fruits of Early-ripe, White Flesh and Hard Melting Nectarine and Peach
Abstract:The effect of film mulching on volatile compounds in fruits of Luxing nectarine and Chunxue peach were studied to understand the mechanism influencing flavour of early-ripe, white flesh and hard melting peach and nectarine. The fruit volatile compounds of Luxing nectarine and Chunxue peach cultivated with black plastic film mulching were analyzed by static headspace and gas chromatography-mass spectrometry. Results showed that total 38 volatile aroma compounds and 24 characteristic compounds (CICs) were detected in fruits of Luxing with film mulching and 39 compounds and 23 CICs in its control. 42 compounds were detected in fruits of Luxing with film mulching as the same as the control. There were 22 CICs in fruits of Chunxue by treatment and 23 CICs in its control. The common logarithms of odor values of 1-hexanol, hexanal, benzaldehyde, butyl acetate, 2-methyl-1-butanol acetate, hexyl acetate, γ-decalactone, δ-decalactone and γ-dodecalactone in fruits of two cultivars, and linalool in Chunxue were decreased by film mulching obviously. The volatiles of two cultivars were all alcohols, aldehydes, esters, lactones, terpenoids and ketones. Contents of lactones and esters were the highest in volatiles of Luxing and Chunxue respectively. The higher aldehydes, lower alcohols, esters and lactones, and similar C6 compounds and ketones were detected in fruits of two cultivars with mulching compared with their control. Meanwhile, the lower terpenoids were found in mulching Chunxue.Volatiles influencing two cultivars fruit flavor were diminished by film mulching.
